Academic Biography

Blessing is a Lecturer in Food Science at Teesside University. She has a BSc in Food Science and Technology at Michael Okpara University of Agriculture Umudike, Nigeria. After her Bachelor’s degree, she obtained a Master’s degree in Food Technology and Quality Assurance and a PhD in Food and Nutritional Sciences at the University of Reading. Blessing attributes all her career achievements to the Lord Jesus Christ who has given her the ability to accomplish set goals.  Prior to her role at Teesside University, Blessing has worked as a Research Officer at the University of Reading and as a Lecturer at Nottingham Trent University. She is passionate about Food Safety and enjoys teaching the application of Food Safety across higher institutions and among food manufacturers. She has trained food business owners on Food Safety and developing a HACCP (hazard analysis and critical control point) plan. She adopts an interactive student-centred teaching method to enhance a good learning experience. Her research interest is in the processing and characterisation of alternative proteins.
